General description and relevant information Conèixer les característiques morfològiques, fisiològics i moleculars dels microorganismes implicats en els processos enològics. Donar a conèixer els principis bioquímics bàsics de la maduració del raïm i dels processos de fermentació vínica, com a fonaments de la tecnologia enològica. Controlar i estabilitzar els vins des de el punt de vista microbiològic.
